食品专业综合实验中PBL教学法的应用

【摘要】 食品专业综合实验是高等学校食品科学与工程专业必修课程。在专业综合实验的教学中,运用PBL教学法,探究该教学法的教学效果。调查结果表明,采用PBL教学,学生能更加自觉地参与食品专业综合实验的准备和实际操作,能更好地将专业的理论知识与实践有机地结合起来,可以培养学生自学能力、查阅文献能力、协作能力、动手能力等,提高学生的综合素质,PBL教学法的教学效果优于传统教学法。因此,食品专业综合实验课程中,可以采用PBL教学法,培养学生的综合能力,提高教学质量。

【Abstract】 Food comprehensive experiment is the required course for the students of food science and engineering. A novel teaching method named problem-based Learning(PBL) method was used in the teaching of food comprehensive experiment, and the teaching effectiveness was explored. The results showed, the teaching method could improve the students’ interests in the preparation and practical food comprehensive experiments, and combine the professional theoretical knowledge with practice organically, and cultivate self-learning ability, collaboration skills etc.., and improve the overall quality of students. The teaching effectiveness of PBL is better than traditional teaching. It is meaningful try for cultivation of high quality food professionals.
