培养基成分对红曲色素发酵过程中生物量及色价的影响
Effect of Medium Composition during Liquid Fermentation of Monascus on Biomass and Color Value
【摘要】 利用单因素实验对红曲霉发酵过程中生物量与色价的影响进行了研究。通过单因数实验得到最佳碳源和氮源分别是玉米粉和Na NO3。实验得到优化发酵培养基:玉米粉浓度50 g/L,Na NO3浓度7 g/L,KH2PO4浓度8 g/L,Ca Cl2浓度0.05 g/L,优化的培养基用于红曲霉发酵生物量达到了24.7 g/L,色价达到了110 u/L。
【Abstract】 By single factor method experiment influence, biomass and color value of Monascus fermentation process were studied. Get the best carbon and nitrogen sources through a single factor tests are corn flour and Na NO3. Fermentation medium obtained by orthogonal experiment to optimize formulations for corn flour 50 g/L, Na NO3 7 g/L, KH2PO4 8 g/L, Ca Cl2 0.005 g/L. Medium optimized in biomass and color value can be reached 24.7 g/L, color value 110 u/L.
