3种茶抗氧化性的研究
Research of three kinds of tea oxidation resistance
【摘要】 采用钴离子和过氧化氢反应产生羟基自由基,羟基自由基和苯甲酸反应后用荧光分光光度法测定加入茶叶时荧光强度改变量,从而建立了一种用荧光法测定茶叶对羟基自由基的清除率的方法.且通过改善荧光强度的条件试验,采用荧光分光光度法测定茶叶对羟基自由基的清除率,对比分析得出3种茶的抗氧化性大小.
【Abstract】 In this paper,cobalt ions and hydrogen peroxide hydroxyl radicals were generated in the reaction,hydroxyl radicals and benzoic acid by fluorescence spectrophotometry were reacted with tea fluorescence intensity change,which created a tea to hydroxyl free radical clearance rate measured by fluorescence method. And the condition of the fluorescence intensity test were improved,the use of fluorescence spectrophotometry tea clearance rate of hydroxyl radicals,it is concluded that the oxidation resistance of three kinds of tea with comparison and analysis.
