2012年广州市越秀区食品中食源性致病菌污染状况监测

【摘要】 目的掌握食源性致病菌的污染状况,及时发现食品安全隐患。方法参照2012年食源性致病菌监测工作手册进行。结果 10类389份样品中,共检出食源性致病菌76份,食源性致病菌总检出率为19.54%,沙门菌在生禽肉、动物性水产品检出率较高,分别为16.13%、3.45%;单增李斯特菌主要在生畜肉中检出,检出率为4.76%;副溶血性弧菌在动物性水产品和生食类蔬菜都有检出,检出率分别为20.69%和2.22%。肠出血性大肠杆菌O157:H7仅在生畜肉中检出,检出率为2.38%,大肠菌群不合格率为21.9%,其中以熟肉制品不合格率最高,达32.14%,其次为糕点类、豆制品、生食类蔬菜、果汁。结论 2012年广州市越秀区食源性食品污染情况仍然较为严重。

【Abstract】 Objective To understand the pollution status of food-borne pathogens,so as to timely find the food safety risk. Methods The food-borne pathogens monitoring was carried out according to the Handbook of food-borne pathogens monitoring in 2012. Results In 389 samples of 10 kinds,food-borne pathogenic bacteria were detected in 76 samples,the total detection rate was 19. 54%. Salmonella was frequently detected in raw poultry and aquatic animal products,the detection rates were 16. 13% and 3. 45% respectively. Listeria monocytogenes was mainly detected in raw meat,and the rate was 4. 76%; Vibrio parahaemolyticus in aquatic animal products and fresh vegetables are detected,and the detection rates were 20. 69% and 2. 22% respectively. Enterohemorrhagic Escherichia O157: H7 coli were detected only in the raw meat,and the detection rate was 2. 38%. The total unqualified rate of coliform was 21. 9%,highest in cooked meat products( 32. 14%),followed by pastry, bean product,raw vegetables and fruit juice. Conclusion The food contamination status is still serious in Yuexiu district of Guangzhou city in 2012.
