宁波市市售部分水产品卫生质量现况及食用安全性评价
The hygienic status and food safety assessment of aquatic products in Ningbo
【摘要】 目的了解宁波市市区日常消费量较大的6类水产品中VBN、HIS、Indole、TTX、PSP、NSP、ASP及DSP含量水平,评价水产品食用的安全性。方法通过对宁波市区销售的6类主要水产品进行为期1年的采样及检测,运用单项质量指数法评价各类水产品的食用安全质量,并分析各类水产品的主要风险指标。结果 6类水产品各受检指标检测结果之间的差异均有统计学意义(P<0.01),6类水产品受检指标中VBN、HIS以及Indole存在超标现象,海水虾类Indole、海水鱼中HIS超标较为严重,头足类VBN含量超标相对较低;不同种类水产品VBN及HIS含量超标率之间的差异均有统计学意义(P<0.01),其中海水蟹VBN超标风险较大,贝类HIS超标风险相对较低。结论 VBN、HIS以及Indole指标存在超标,主要市售水产品新鲜程度普遍较低,但尚未出现TTX、PSP、NSP、ASP毒素污染。
【Abstract】 Objective This study aimed to learn the level of VBN, HIS, Indole, TTX, PSP, NSP, ASP and DSP in six kinds of aquatic products and to assess the aquatic food safety in Ningbo. Methods Samples of six kinds of aquatic products in Ningbo City were taken regularly in one year for the analysis of every single index of quality and safety. Results For each quality and safety index, the six kinds of aquatic products were significantly different(P<0.01). The levels of VBN, HIS and Indole in some aquatic products exceeded the standard, espeically indole in sea shrimp and HIS in sea fish. The level of VBN in cephalopod slightly exceeded the standard. For VBN and HIS, the rate of standard-exceeding was significantly different among aquatic products(P<0.01), with the level of VBN in sea crab exceeding the national standard more seriously, and the standard-exceeding rate of HIS in shellfish was much lower. Conclusion The levels of VBN, HIS and Indole in some aquatic products exceed the national standard. Overall, aquatic products for sale in Ningbo City were not fresh enough. Toxic substances such as TTX, PSP, NSP and ASP were not detected.
