热加工对板蓝根体外抗A型流感病毒活性的影响

【摘要】 目的调查热加工对板蓝根体外抗A型流感病毒活性的影响。方法采用A型流感病毒侵染后的狗肾上皮细胞作为板蓝根抗病毒活性的评价模型,测定菘蓝新鲜根冷抽提液、菘蓝新鲜根煎剂、板蓝根冷抽提液和板蓝根煎剂对A型流感病毒的半数抑制率和治疗指数。结果除菘蓝新鲜根冷抽提液对A型流感病毒的半数抑制率和治疗指数无法测得外,菘蓝新鲜根煎剂、板蓝根冷抽提液和板蓝根煎剂对的A型流感病毒的半数抑制率和治疗指数分别为:0.65 mg/ml,0.46mg/ml,1.12 mg/ml和10.72、8.49和14.02。结论热加工可提高板蓝根抗A型流感病毒的治疗指数,这可能与热加工过程中发生的美拉德反应相关。

【Abstract】 Objective To investigate the influence of heat processing on the anti-influenza virus A activity of Radix isatidis in vitro. Methods The half maximal inhibitory concentrations and treatment index of fresh root extract,fresh root boiling water extract,dried root extract and dried root boiling water extract were determined by Madin-Darby Canine Kidney cell virus reduction assay. Results The half maximal inhibitory concentration and treatment index of fresh root extract were not detected,those of fresh root boiling water extract,dried root extract and dried root boiling water extract were 0. 65 mg/mL,0. 46 mg/mL,1. 12 mg/mL and 10. 72,8. 49,14. 02,respectively. Conclusion Heat processing improved the treatment index of Radix isatidis,which may associate with Maillard reaction occurred in heat processing.
