可食性明胶膜研究新进展
The latest progress in research of edible gelatin films
【摘要】 可食性明胶膜主要由猪、牛及鱼皮明胶制成,具有营养价值高、生物可降解性及生物相容性好、抑菌、抗氧化等特点,是一种安全的天然生物食用材料,有助于解决部分食品安全问题,可作为优良的天然食品添加剂、食品包装材料来使用,达到避免微生物污染、重金属迁移、能量传递,并延长产品货架期的目的。从原材料来源、制备、复合及应用等方面进行阐述:不同来源的明胶其结构性能有差异,鱼皮明胶受到了广泛的重视;不同加工工艺及试剂的选择对可食性明胶膜的性能影响显著,如:溶液浓度、pH值、增塑剂、交联剂、金属离子等;复合明胶膜可有效改善明胶膜的机械性能和生物性能,降低生产成本,拓宽其应用范围;可食性明胶膜的开发应用正在大力展开,可望成为优良的生物材料。
【Abstract】 Edible gelatin membrane is a safe and natural material, mainly made of the skin of pig, cow and fish. It features its high nutritional value, biodegradability, biocompatibility, antibiotic property and antioxidant property. Additionally, it is also an excellent natural food additive, beneficial in solving the problem of food safety, used as food packaging material to prevent microbial contamination, migration of heavy metal, energy transfer and to extend the shelf life of products. In this paper, the source of raw materials, the preparation of raw materials, the combination of raw materials and the application of raw materials are discussed. There are differences between the different sources of gelatin and their structures. Gelatin made of fish skin has been widely paid attention. Various processing technological methods and reagents can significantly effect on the edible gelatin membrane, such as: solution concentration, pH value, plasticizer, cross-linking agent, metal ion, etc. Compound gelatin film can effectively improve the mechanical properties and biological properties of gelatin film, decreasing the cost and expanding the field of its application. In a word, the development and application of edible gelatin membrane is powerfully explored and is expected to become a excellent biological material.
