栽培粉葛藤蔓的营养成分特性及其安全性评价

【摘要】 分析湖南省主要的葛藤栽培品种粉葛藤蔓的营养成分特性,通过动物、微生物试验评价栽培粉葛藤蔓的毒理学特性。作为栽培的葛藤,其异黄酮类化合物含量较高,葛根素、大豆苷、大豆苷元含量(干基)分别为0.87%,0.03%,0.05%。用藤蔓乙醇粗提物(Pueraria vine ethanol extracts,PVEE)对幼年、成年、老年小白鼠进行慢性(约PVEE 40mg/kg·体重)与急性(PVEE 4g/kg·体重)毒性试验,并对鼠伤寒沙门氏菌与大肠杆菌等5种菌株进行致突变性试验(PVEE312.5~5 000mg/Plate)。结果表明:PVEE安全性较高,栽培粉葛藤蔓可以作为一种高品质的食物资源。

【Abstract】 The nutrient characteristics of the representative cultivated Kudzu vine were analyzed,and the toxicological characteristics of Kudzu vine were systematically evaluated by the animal and microbiotic experiments.Isoflavone content(db%)was higher than the culture of kudzu vine,and the contents of puerarin,daidzin,and daidzein were 0.87%,0.03%,and0.05%,respectively.With Pueraria vine ethanol extract(PVEE),the chronic toxicity test(PVEE40mg/kg body weight)and the acute toxicity test(PVEE 4g/kg body weight)were carried out on child,adult,old mice,and also Ames test(PVEE 312.5~5 000mg/plate)on five strains of Salmonella typhimurium and Escherichia coli.The results show that PVEE is a relatively safe material,and Kudzu vine may be of high quality food resources.
