山楂粉喷雾干燥加工工艺的研究

【摘要】 以山楂为原料,经过喷雾干燥进行山楂粉的研制,应用正交试验研究了山楂粉的适宜包埋剂,并采用多元回归正交试验设计,研究了麦芽糊精、β-环状糊精、CMC添加量和山楂粉集粉率的关系。试验结果表明,适宜的辅料添加量组合为麦芽糊精40%、β-环状糊精20%、CMC1.5%,在此条件下,山楂粉集粉率可达34.4%;山楂粉集粉率(y)随麦芽糊精(x1)、β-环状糊精(x2)、CMC(x3)添加量变化的回归方程为=31.875%-0.1x1-1.25x2+0.9x3+1.175x1x3-1.325x2x3。

【Abstract】 Hawthorn as raw material, hawthorn powder was processed with spray drying and suitable entrapping agents of hawthorn powder were studied with the application of orthogonal test. The relation about maltodextrin amount, β-cyclodextrin, CMC and collection rate of hawthorn fruit powder was studied with multiple regression orthogonal experimental design. The results showed that, the optimum parameters were as followings: maltodextrin 40%, β-cyclodextrin 20%, CMC 1.5%. Under these conditions, the collection rate of hawthorn fruit powder can reach 34.4%; the standard regression model of relation about maltodextrin(x1), β-cyclodextrin(x2), CMC(x3) and the rate of collection is =31.875%-0.1x1-1.25x2+0.9x3+1.175x1x3-1.325x2x3.
