【Abstract】 Rich in nutrients and high physiological efficiency,chestnut products are popular among domestic and foreign consumers. However,fresh chestnuts easily get rotten and cannot be kept for a long time. In chestnut processing,such phenomena as aging and discoloration often happen. Many kinds of products have not formed the scale economy. We should improve the shelf life of chestnut products,make full use of chestnut resources for innovation and transformation.
