大豆油中挥发性醛类物质的检测与鉴别

【摘要】 采用水蒸气蒸馏-溶剂萃取法(SDE)对从农村集市上收集的劣质大豆油挥发性成分进行提取,旋蒸和氮吹法进行富集,通过气相色谱-质谱仪(GC-MS)检测和鉴别,探讨其挥发性物质与油品品质的关系。结果表明,从大豆油中检出有代表性的4种挥发性醛类物质(反式4-庚二烯醛、壬醛、2,4-壬二烯醛、2,4-癸二烯醛)对大豆油品质研究具有一定指导意义。

【Abstract】 Seam distillation-solvent extraction method is used to extract the volatile substances of poor quality soybean oil collected from rural market,rotary evaporator and nitrogen blowing is used to enrich,detected and identified by GC-MS,in order to explore the relationship with oil quality. The experiment shows that the typical volatile aldehydes soybean oil included2,4-Heptadienal(E,E),Nonanal,2,4-Nonadienal,and 2,4-Decadienal,which have certain guiding significance on the quality of soybean oil.
