α-桐油酸在不同条件下的稳定性研究

【摘要】 α-桐油酸为不饱和三烯酸,具有抗氧化、抗肿瘤等生物活性,容易氧化变质,对保存条件要求苛刻。通过紫外光谱、红外光谱及核磁共振等光谱手段研究了α-桐油酸在紫外光、自由基、过氧化物存在下的稳定性,探讨了其氧化机理及动力学参数。结果表明紫外光、自由基以及过氧化物的存在均能加速α-桐油酸的氧化,而且过氧化物存在时α-桐油酸的氧化更快一些。

【Abstract】 Alpha-eleostearic acid belongs to conjuged trience acid which has antioxidation and antitumor activities. Alphaeleostearic acid is easily oxidized and should be saved carefully. The stability,oxidation mechanism and kinetics parameters of α-eleostearic acid which was induced by radical,peroxide,ultraviolet irradiation were investigated by UV-VIS absorption spectroscopy,infrared spectroscopy and nuclear magnetic resonance respectively. The results showed that radical,peroxide,ultraviolet irradiation can increase the rate of oxidation of α-eleostearic acid,and the rate of oxidation of α-eleostearic acid is faster in the presence of peroxide.
