电子鼻用于刺梨汁整体风味的分析与评价
Analysis and Evaluation on Overall Flavor of Rosa roxburghii Juice by Electronic Nose
【摘要】 采用气味指纹分析仪(电子鼻)对不同成熟度、不同冷藏期和不同浓度的刺梨果汁进行风味识别,并探讨电子鼻对未知刺梨果汁样品体积分数的判定能力.结果表明,电子鼻能准确区分不同成熟度、不同贮藏期和不同体积分数刺梨样品的整体气味,并能识别和判定未知样品的体积分数.
【Abstract】 Electronic nose detection was used for flavor analysis of roxburgh rose juice of different maturity,shelf- life during refrigeration and concentration as well as adulteration detection of roxburgh rose juice. The results show that electronic nose can accurately discriminate the complete odor with different maturity,storage periods during refrigeration and concentrations of roxburgh rose juice samples as well as identify and judge the concentrations of unknown samples.
