广东湛江海域8种野生鲾科鱼肌肉中脂肪酸含量分析

【摘要】 目的测定广东湛江海域8种野生鲾科鱼肌肉中脂肪酸含量。方法先用2%对甲苯磺酸-甲醇溶液将鱼肌肉中脂肪酸甲酯化,再用气相色谱法测定脂肪酸甲酯含量。结果 8种鲾科鱼肌肉中饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸含量分别为43.10%~51.58%、11.64%~21.79%、27.68%~45.26%。结论 8种鲾科鱼肌肉中均含较高的多不饱和脂肪酸,具有较丰富的营养价值。

【Abstract】 Objective To determine the content of muscular fatty acids in 8 ponyfish species in Zhanjiang ocean. MethodsFatty acid methyl ester levels were determined by gas chromatography after methyl esterification of muscular fatty acids with 2% p-toluene sulfonic acid and methanol solution. Results The concentrations of saturated, monounsaturated and polyunsaturated fatty acids in muscles of 8 ponyfish species were 43.10%~ 51.58%, 11.64%~ 21.79%, and 27.68%~ 45.26%, respectively.Conclusion All of 8 ponyfish species have the rich nutritional value due to high contents of muscular polyunsaturated fatty acids.
