【Abstract】 Pigments were extracted from the purple peel of wild banana in Sanming city by acid solution and the content of authocyanin was determined by pH-differential method.The results showed that the content of cyanidin 3-glucoside in the wild banana peel was 5.43mg/100g by using 1% HCl-methanol as solvent,and buffering for 80minutes after extraction.更多还原
