温185核桃破壳取仁工艺试验研究

【摘要】 [目的]研究薄皮核桃破壳取仁工艺,提高高路仁得率。[方法]以温185薄皮核桃为研究对象,研究核桃含水率、破壳加载速度以及加载位置对破壳后整仁、一路仁和二路仁的影响规律,在前期单因素试验结果的基础上,采用二次旋转组合试验方法设计试验,用SAS、matlab软件处理数据,建立相关数学模型。[结果]试验表明,在试验参数范围内,核桃含水率、加载速度和加载位置对高路仁的得率影响显著;当加载变形量12 mm、核桃含水率8%,加载速度为300.15 mm/min和C向加载条件下,整仁得率最高可达60.28%。[结论]该试验所建数学模型对温185核桃破壳取仁工艺具有重要的参考作用,可为实际生产中提高高路仁得率提供参考依据。

【Abstract】 [Objective]To study cracking walnut technique and improve whole kernel yield. [Method]With Xinjiang Wen 185 walnut as study object,the influences of moisture content of walnut,loading-rate and loading-position on the rate of whole kernel were investigated by quadratic regression rotary combination experiments. Excel and SAS software were used to analyze the experimental data. [Result] The results showed that,moisture content of walnut,loading-rate and loading-position had significant effects on the rate of whole kernel; The maximum rate of whole kernel with new technology is as high as 60. 28% when deformation amount was 12 mm,the moisture content of the walnut was 8%,loading-rate was 300. 15 mm /min and loading-position at"C". [Conclusion] The study and results can provide a theoretical basis for cracking walnut and fetching kernel of"Xinjiang Wen 185"walnut.
