鹰嘴豆不同品种种子α-淀粉酶抑制剂抑制活性

【摘要】 研究新疆34个不同鹰嘴豆品种种子α-淀粉酶抑制剂抑制活性的差异。结果表明,多数Kabuli和Desil品种间α-淀粉酶抑制剂抑制活性存在显著差异(P<0.05),且34个品种的α-淀粉酶抑制剂的抑制活性在品种间呈偏态分布;Kabuli品种蛋白质含量与α-淀粉酶抑制剂抑制活性呈极显著(P<0.01)正相关,说明品种蛋白质含量越高,其α-淀粉酶抑制剂含量也越高;而品种淀粉含量与α-淀粉酶抑制剂抑制活性呈显著(P<0.05)负相关,说明品种淀粉含量越高,α-淀粉酶抑制剂含量越低;偏相关分析表明,α-淀粉酶抑制剂与蛋白质和淀粉含量之间均有一定的线性关系;通过系统聚类法把34个鹰嘴豆品种聚为4类,其品种数分别为1、7、12和14。

【Abstract】 This study analyzed the difference of inhibitory activity of α-amylase inhibitor of seed of 34 chickpea varieties.The results showed that there were significant difference(P<0.05) on the inhibitory activity of α-amylase inhibitor in most of Kaubli and Desil varieties.And 34 varieties of α-amylase inhibitor activity in cultivars were plotted with skew distribution;there was a significantly and positively correlation(P<0.01) between inhibitory activity of α-amylase inhibitor and protein content of Kaubli varieties,this explained that the higher the protein content was,the higher α-amylase inhibitor content was;but there was a negative correlation(P<0.05) between inhibitory activity of α-amylase inhibitor and starch content and explained that the higher the starch content was,the lower α-amylase inhibitor content was;partial correlation analysis showed that there was a linear function between α-amylase inhibitor and protein,starch content;by cluster analysis,the 34 chickpea varieties were classified into 4 clusters,and the number of varieties were 1,7,12 and 14,respectively.
