In order to avoid the man-made deviation in identifying moderate fermentation of Congou black tea caused by the estimation based on the observation on feature changes of fermented leaves(such as the color and smell of leaves), this paper puts forward a standardized test measure that is to identify moderate fermentation of Congou black tea by using spectral photometer.
