广玉兰红色素的提取及性质研究

【摘要】 主要探讨广玉兰籽色素的提取工艺并就其色素稳定性进行了研究。结果表明:广玉兰红色素为脂溶性色素,用丙酮试剂超声辅助提取的效果较好。广玉兰籽红色素液的最大吸收峰为560 nm,且该色素稳定性好,抗氧化还原性强。

【Abstract】 The southern Magnolia seed pigment extraction process and the stability of the pigment were studied.The results showed that southern Magnolia red pigment is fat soluble pigment.With acetone reagent ultrasonic assistance,the extraction effect is good.The maximum absorption peak of southern Magnolia seeds red pigment solution is 560 nm.The pigment has good stability,strong oxidation resistance and strong resistance to reducing.
