速溶蒲菜粉生产工艺研究

【摘要】 通过对微波、超声波和酶解三种优化方法处理所得的蒲菜粉进行质量比较,确定了微波处理制得的蒲菜粉质量最好,进一步对微波处理进行单因素和正交试验设计,获得蒲菜粉生产最佳工艺组合,即微波处理,作用时间4 min,功率900 W,料液比1:2(m:V)。

【Abstract】 Techniques such as microwave treatment,ultrasonication and enzyme hydrolyzing were used to develop a instant Typha latifolia powder.In comparison of three techniques,the microwave treatment was the best one in term of quality.The best technological conditions of Typha latifolia powder were investigated by single-factor and orthogonal design.The result show that the pulp was the best with microwave treatment in 900 W,4 minutes and 1:2(m:V).
