从古井贡酒制作技艺革新看传统技艺传承与演变的社会成因
On Social Reasons of Inheritance and Evolution of Traditional Techniques from the Perspective of the Technique Innovation in Making Gujing Tribute Wine
【摘要】 古井贡酒制作技艺在传承的历程中经历了几个技术阶段:原始的发酵酒"九酝春酒"制作技艺;明代"老五甑"蒸馏酒制作技艺,现代微生物技术应用产生的白酒勾兑技艺。每次技术革新都有一定的社会原因,决定古井贡酒制作技艺革新的社会因素主要有经济发展要求、文化因素和科学技术系统的成熟度。
【Abstract】 In the process of inheritance, the making technology of Gujing Tribute Wine has experienced several technical stages, which are influenced by certain social facts, such as the requirement of economic development, cultural elements and the maturity of science and technology.
