【Abstract】 Objective To ensure lunch food safety on the day of opening ceremony of twelfth annual meeting of China association for science and technology. Methods Apply the principles of HACCP to carry out hazard analy- sis on the whole course of lunch making,ascertain the key control point and take relative control measures. Results After the application of the HACCP system,lunch safety in the day of opening ceremony have been guar- anteed. Conclusion It is an inevitable tendency to apply the principles of HACCP and to carry out hazard analysis in sanitation supervision at significant activity.更多还原
