牛奶对绿豆芽生长及其品质的影响

【摘要】 为测定牛奶对绿豆芽生长及其品质的影响,将市售蒙牛纯牛奶稀释4倍、20倍、100倍和500倍分别对绿豆进行处理,以去离子水处理的作对照。结果表明,用牛奶500倍和100倍稀释液淋洒绿豆可以促进绿豆芽的生长,且牛奶500倍稀释液的促进效果比牛奶100倍稀释液的效果更明显;牛奶20倍和4倍稀释液则抑制绿豆芽的生长,且牛奶4倍稀释液抑制效果更严重;牛奶浓度相对高的处理的绿豆芽N含量和VC含量高于低浓度处理;牛奶4倍和20倍稀释液处理的绿豆芽干重比对照高。

【Abstract】 In order to determine the influence of milk on growth and quality of mung bean sprouts,the sold sterilized milk diluted 4 times,20 times,100 times,500 times and distilled water had been used to treat mung bean sprouts.The results show that,the milk diluted 500 times and the milk diluted 100 times could promote the growth of mung bean sprouts,and the milk diluted 500 times showed better effect on growth of mung bean sprouts;however,the milk diluted 4 times and the milk diluted 20 times inhibited the growth of mung bean sprouts,and the inhibitory effect of the milk diluted 4 times was more serious;the N content and VC content in mung bean sprouts treated by high concentration(such as the milk diluted 4 times groups and the milk diluted 20 times group) were higher than those treated by low concentration(such as the milk diluted 500 times and the milk diluted 100 times);the dried weight of mung bean sprouts treated by the milk diluted 4 times group and milk diluted 20 times group was higher than the control group.
