【摘要】 采用氨基酸自动分析仪检测并比较费菜根、茎、叶和果4个部位17种氨基酸的组成与含量,并对其中必需氨基酸的含量进行分析。结果表明:费菜含有丰富的氨基酸种类,根和果中含有所测定的全部17种氨基酸,叶片和茎中含16种氨基酸,其总氨基酸含量为样品干重4.44%—7.20%,不同部位氨基酸含量果>叶>茎>根;4个部位均含有实验所测定的7种人体必需氨基酸,其中,叶片作为费菜主要的食用部位,必需氨基酸与总氨基酸的比值(EAA/TAA)为34.10%,必须氨基酸与非必需氨基酸的比例(EAA/NEAA)为51.74%,与食物蛋白氨基酸理想比例接近,必需氨基酸配比较为合理,具有较好的营养价值。更多还原

【Abstract】 The compositions and contents of amino acids in the root,stem,leaf and seed of Sedum aizoon L.were analyzed with amino acid auto analyzer.The results indicated that the contents of amino acids of Sedum aizoon L.were abundant.The differences of contents of amino acids between different parts of Sedum aizoon L.were large.The percentages on the dry weight of amino acids in the root, stem,leaf and seed of Sedum aizoon L.were form 4.44%—7.20%.The analyzed results of essential amino acid and non-essential amino acid indicated that Sedum aizoon L.leaf had higher nutritional values.更多还原
