燕麦麸膳食纤维提取工艺的研究

【摘要】 以燕麦加工产品的剩余滤渣为原料,研究酶-碱结合法制备燕麦麸膳食纤维的提取工艺。在单因素试验的基础上,通过正交试验,确定提取燕麦麸膳食纤维的最佳工艺条件为:料水比1∶10,α-淀粉酶添加量1.5%,溶液pH 6.5,65℃条件下酶解30 min,酶解液加3%浓度为1 mol/L的NaOH溶液,60℃条件下碱解40 min。制得的燕麦麸膳食纤维的提取率可达56.43%,持水力为3.414 9 g/g,溶胀性为3.13 mL/g。

【Abstract】 Taking oat bran as materials,the preparation process of dietary fiber from oat bran with enzyme-alkali extraction method was studied.On the basis of single factor test,through the orthogonal test,the optimum process conditions of oat bran dietary fiber extraction were as follows,the ratio of material to water was 1 ∶10,addition of αamylase was 1.5%,time of enzymolysis was 30 min under 65 ℃,then added 3% 1 mol/L NaOH,alkaline hydrolysis time was 40 min under 60 ℃.The extraction rate of oat bran dietary fiber could up to 56.43%,water holding capacity was 3.414 9 g/g,the swelling property was 3.13 mL/g.
