洋芋中龙葵素的提取工艺研究

【摘要】 洋芋不耐贮藏,传统贮藏因缺乏质量安全评估易造成薯皮变绿、发芽。为了更好地开展洋芋安全贮藏保鲜,以胡陈洋芋为试验材料,通过回流法比较不同温度、溶剂、料液比和提取时间等提取条件,研究用索氏提取法提取洋芋龙葵素的最佳工艺条件对洋芋外观品质及龙葵素含量的影响。结果表明,影响洋芋中龙葵素的提取效果大小的因素依次为:料液比>溶剂种类>提取时间;最佳提取条件为:10:1的乙醇-乙酸,15:1料液比,提取时间为3 h。

【Abstract】 Huchen potato were selected as experimental materials,researching the extract method using different solvent,material liquid ratio and extraction time for potato solanine affect the content of solanine.The results showed that,the combination which the solvent ratio of ethanol to acetic acid was 10:1,the ratio of material liquid was 1:15,the time of extracting was 3 h,that was significantly better than other condition combination,so it was the best extraction condition.
