丁酸梭菌生理功能及应用研究进展

【摘要】 丁酸梭菌是一种益生菌,具有维持肠道微生态平衡、提高免疫力、抗癌、产生营养物质等功能。丁酸梭菌开发利用前景广阔,目前已应用于食品、医药、农牧、化工等诸多领域。但是国内对丁酸梭菌的研究及开发利用滞后,目前仍处于起步阶段,相比其它益生菌重视度不足。本文介绍了丁酸梭菌的形态特征和生化特征,综述了其生物学功能及在食品、医药、工业、动物等领域的应用,指出了研究和应用中存在的问题,旨在为丁酸梭菌的进一步开发利用提供参考。

【Abstract】 Clostridium butyricum is a kind of probiotics which has the properties of maintaining the intestinal microecological balance,improving immunity,anti-cancer,and producing nutrients.Clostridium butyricum has a bright future of development and utilization and now it has already been applied in food,medical,breeding,and industry areas,but the research and exploitation of Clostridium butyricum is slow and hasn’t arose much attention,and now it is still at the beginning.This paper introduced the morphological characteristics and biochemical characteristics of Clostridium butyricum,summarized its physiological function and application in food,medical,industry,and animal feed,pointed out the problems during research and application to provide references for further exploitation of Clostridium butyricum.
