【Abstract】 Cross contamination was one of important factors to cause the problem of food quality and safety.The paper studied the conception,occurring mechanism and origin of cross contamination.To face to the present situation,the paper presented the feasible prevention control measures,including the workers’ health,the cleaning and sanitizing of equipments,the insects control and physical and chemical cross pollution control,which established the theory and practical base to decrease the hazard of food safety.更多还原
