ICP-MS法测谷类和杂豆类中元素的比较

【摘要】 分析谷类和杂豆类中铁、锌、钙、镁等元素含量,探讨不同类别杂粮中元素的含量情况,对常见杂粮中人体所需的各种元素做出评价。采用微波消解处理杂粮样品,电感耦合等离子体-质谱(ICP-MS)法进行元素含量测定。杂粮中元素含量区间变化较大,如谷类中钒和豆类中的硒元素含量相差两三个数量级,元素之间含量差别也较大,如谷类中镁和硒,豆类中的钙和钴等。结果还表明谷类中的各种元素含量都较豆类中偏低,两类杂粮中铁、锌、钙、镁、铜、锰的含量都较高,采用统计软件SPSS11.5进行分析,结果显示钙、钼、钴、锡含量有显著性差异。结论表明:谷类和杂豆类两类杂粮中都含有丰富的人体必需元素,尤其是杂豆类中钙、钼、钴、锡、硒等元素含量较高,可能参与人体的多种代谢途径,具有更大的营养学意义,为食品工业和居民合理膳食结构提供基础数据,为制定科学合理的营养健康政策提供参考。

【Abstract】 Analysis 14 elements content in beans,grains and cereals such as Fe,Zn,Ca,Mg,in order to make an evaluation on essential elements in common mixed beans,grains and cereals.The samples were treated by microwave cereals and inductively coupled plasma mass spectrometry(ICP-MS) using statistical software SPSS11.5 for cluster analysis.The range of element contents in grains changed large,for example: V,Se.The content of element was also different such as: Mg and Se,in grains;Ca and Co in beans.There were rich essential elements in two categories grains and beans.Specially,the content of several elements such as Ca,Mo,Co,Se,Ti in beans was higher,which maybe involved in a variety metabolic pathways with greater nutritional significance.This text can provide data for the food industry and people’s reasonable diet.It can also as an objective basis for the development of science policy.
