鱼类肉质评价及影响因素研究进展
Recent Advances in Research on Meat Quality Evaluation and Influencing Factor of Fish
【摘要】 目前,有关鱼类肉质的评价标准还未确立,对肉质进行全面评估的研究还未见报道。本文对鱼类肉质研究内容和方法的研究现状以及影响鱼类肉质的因素作一综述,以期为进一步研究和评价鱼类肉质提供一定参考。
【Abstract】 To date,criteria for evaluating fish meat quality have not yet been established and there has been no report on comprehensive meat quality evaluation.This paper reviews the current status of research on measures and methods for the evaluation of fish meat quality and its influencing factors with the aim of providing references for further research and evaluation of fish meat quality.
