【摘要】 目的掌握本市餐具集中消毒单位消毒餐具的卫生状况,为监督管理提供技术依据。方法对本市41家餐具集中消毒单位成品库中的消毒餐具随机抽样,检测感官、致病菌、烷基(苯)磺酸钠等指标。结果 41家单位的餐具全项指标合格31家,占75.60%;410份餐具全项指标合格率为96.58%。其中烷基(苯)磺酸钠合格率为95.12%(195/205),大肠菌群合格率为99.02%,感官、金黄色葡萄球菌、溶血性链球菌、沙门氏菌、志贺氏菌合格率均为100.00%;集中消毒单位与小型饮食业餐具微生物指标合格率差异无统计学意义(P>0.05)。结论集中消毒单位消毒餐具仍存在卫生问题,应加强卫生监督管理。更多还原

【Abstract】 Objective To investigate the sanitary status of sterilized tableware in centralized sterilization companies in Shenzhen and provide the technical basis for supervision and management.Methods Sterilized tableware in 41 centralized sterilization companies was randomly sampled and indicators including sensory,coliform bacteria,staphylococcus aureus,hemolytic streptococcus,salmonella,shigella,alkyl(benzene) sulfonic acid sodium were detected.Results All the indicators were qualified in 31 of 41 centralized sterilization companies,accounting for 75.60%.The qualification rate of all the indicators was 96.58% in 410 sets of tableware,in which the rate for alkyl(benzene) sulfonate was 95.12%(195/205),for coliform bacteria was 99.02%,and indicators of sensory,staphylococcus aureus,hemolytic streptococcus,salmonella,shigella were all 100%.There was no significant difference in the qualification rate of microorganisms between centralized sterilization companies and small restaurants(P> 0.05).Conclusion There are still sanitary problems for sterilized tableware in centralized sterilization companies in Shenzhen and health supervision and management should be strengthened.更多还原
