谷氨酰胺对肉仔鸡生长性能、胴体组成和肉质的影响

【摘要】 选1日龄艾维茵肉仔鸡300只,随机分成4组(每组3个重复,每个重复25只)。各组日粮分别添加0、0.5%、1.0%、1.5%的谷氨酰胺,试验期为42d,研究不同浓度谷氨酰胺对肉仔鸡生长性能、胴体特性和肉质的影响。结果显示,与对照组相比,0.5%、1.0%、1.5%谷氨酰胺组的日增重分别增加了6.29%(P<0.05),2.00%(P>0.05)和3.48%(P<0.05);料重比都有所下降,但差异不显著(P>0.05),表明谷氨酰胺具有提高肉仔鸡日增重、降低料重比的作用。同时谷氨酰胺还可改善肉仔鸡胴体组成,提高肌肉pH值和系水力(P<0.05),显著提高肌肉中胶原蛋白和肌苷酸的含量(P<0.05),起到改善肌肉品质的作用。

【Abstract】 Three hundred healthy Avian broilers of one day age were randomly divided into four treatments,each including three replicates of twenty-five broilers.The broilers were fed a corn-soybean meal diet containing different glutamine levels of 0,0.5%,1.0%,1.5% for six weeks to study the effects of glutamine on growth performance,carcass composition and meat quality.The results showed that:in the groups of adding glutamine levels of 0.5%,1.0%,1.5%,daily gain of broilers was increased by 6.29%(P<0.05),2.00%(P>0.05)and 3.48%(P<0.05),respectively,feed gain ratio was decreased in all three groups(P>0.05)compared to the basal diet group.The results also indicated that with glutamine added,the carcass composition could be improved,pH value,water holding capacity of meats and the contents of collagen and inosinic acid were significantly increased(P<0.05).
