【摘要】 目的了解东莞市厚街镇餐饮单位餐具消毒状况,分析不同规模、种类餐饮单位餐具消毒效果。方法采用大肠菌群快速检测纸片法,抽取2009年1-9月份厚街镇餐饮单位消毒后备用餐具进行检测。结果较大型餐饮单位的餐具检测合格率为95.2%;普通餐饮单位的餐具检测合格率为16.3%;学校幼儿园饭堂的餐具检测合格率为40.9%;工厂集体饭堂的餐具检测合格率为30%。结论餐具消毒总体合格率较低,应加大执法力度,餐饮监管部门应加强指导,提高餐具消毒效果,尤其要督促搞好学校、工厂集体食堂餐具消毒工作;对中小型的餐饮单位推行公共餐具集中消毒。更多还原

【Abstract】 Objective To know the tableware disinfection status in catering units of Houjie town and analyze the disinfection effects in different scales and kinds.Method Coliform bacteria paper quickly detected methods was used in this study to detect the samples from January to September in 2009 at Houjie town.Results Tableware pass rate was 95.2% in relatively large catering units;16.3% in ordinary catering units;40.9% in school canteens;30.0% in factory canteen.Conclusions The tableware disinfection pass rate was low in total.So supervisory board should enforce the laws,and strengthen the guidance to catering,improve the disinfection effects to tableware,especially school and factory canteens,and implementation public tableware centralized sterilization is necessary for small and medium catering units.更多还原
