【摘要】 分析了东方蝼蛄的营养组成及各成分含量。采用目前的国家标准方法测定水分、粗蛋白、粗纤维、粗脂肪和氨基酸。研究结果表明:东方蝼蛄中水分含量为6.08%;粗蛋白质含量为66.33%;粗纤维含量为1.05%;采用索氏抽提法和氯仿-甲醇法测得其脂肪含量分别为20.11%和26.07%;总氨基酸含量为54.87%,其中必需氨基酸含量为18.81%,占总氨基酸的36.06%。由此可见,东方蝼蛄是一类富含蛋白质、脂肪的食品资源。更多还原

【Abstract】 To analyze the nutrional composition in Gryllotapa orientalis brmeister.Water,crude protein,crude fiber and amino acids were determined by national standard method.Lipid was determined by Soxhlet extraction method and chloroform-methanol extraction method separately.The content of water,crude protein,crude fiber were 6.08%,66.33%,1.05%,respectively.The content of lipid were 20.11%(by Soxhlet extraction method) and 26.07%(by chloroform-methanol extraction method).The total content of amino acids was 54.87%,essential amino acids 18.81%.There were plenty of crude protein,lipid in Gryllotapa orientalis brmeister.更多还原
