多酶分步水解鸭骨的工艺研究及其产物成分分析

【摘要】 对鸭骨的单酶水解条件进行了优化,并在此基础上进行了多酶(双酶)分步复合水解工艺的研究,分析了最佳水解条件下的产物氨基酸组成及肽分子量分步范围。结果表明:多酶分步复合水解鸭骨的效果优于单酶水解,先用碱性蛋白酶后用木瓜蛋白酶分步复合水解的效果最好,水解度可达34.71%;鸭骨水解物中必需氨基酸含量占氨基酸总量的34.87%(色氨酸未检测),必需氨基酸的相对含量较鸭骨原料有所提高,特别是富含普通谷物中极易缺乏的赖氨酸、苏氨酸和缬氨酸等;鸭骨水解物肽的相对分子质量均在8000u以下,相对分子质量小于1000u的肽含量达31.35%。

【Abstract】 The step wise multienzymatic(proteases) hydrolysis of duck bone was studied based on the optimum conditions of single protease hydrolyses duck bone protein,and the amino acid components and relative molecular weight of duck bone hydrolysate peptides were analysised in this paper.The results show that it was better hydrolyzed by multienzyme than single protease,and used papain hydrolysed duck bone following alkaline protease was the best,the degree of hydrolysis under this condition reached 34.71%.Besides the tryptophan which was not detected,the necessary amino acid content in the hydrolysate was 34.87% which was higher than in the raw duck bone,especially rich in lysine,threonine and valine which were lacking in corn.The relative molecular weight of the duck bone hydrolysate peptides were lower 8000 u,which contained 31.35% peptides of the relative molecular weight lower 1000 u.
