富硒功能保鲜剂在脐橙上的富硒效果研究
The Research on the Effect of Selenium-enrich Antistaling Agent on Navel Orange
【摘要】 采用动植物原料制备出了新型富硒功能保鲜剂(CN-1),并利用果蔬的呼吸作用,使果蔬在保鲜的过程中富硒.实验测定了脐橙在储藏和保鲜过程中硒含量的变化,考察富硒功能保鲜剂对水果脐橙富硒效果.结果表明,采用富硒功能保鲜剂浸泡的脐橙能明显提高脐橙的果肉硒含量,且随着富硒保鲜剂中硒浓度的增大,果肉富硒含量也增大.按照国家标准对富硒食品硒含量的要求及食品中硒的限量标准,得出富硒功能保鲜剂中最佳硒浓度为180 mg/L.所制备出的富硒保鲜剂为天然生物保鲜剂且可人为控制硒的含量,不会出现硒超标及环境污染等安全性问题.富硒功能保鲜剂既可提高水果中硒含量水平,又可延长水果的销售时间;具有良好的社会效应和经济价值.
【Abstract】 In this paper,the author develops a new antistaling agent(CN-1) from the animal and plant materials.By the respiration of the fruit,selenium is enriched with in the refreshment process of the navel orange.In the experiment,the content change of selenium in the navel orange during storage and refreshment is measured and the effect of selenium-enrich antistaling agent on the navel orange has been observed.The results show that different concentrations of selenium-enriched antistaling agent can increase the selenium content in navel orange correspondingly,and as the concentration increases,the selenium will also increase.Besides,according to the requirements of selenium in food of Chinese standard,it gets the conclusion that the best concentration of selenium is 180 mg/L.Selenium-enrich antistaling agent is a kind of natural and biological antistaling agent,and the contents can be controlled,so there will be no problems about overproof selenium or environment pollution.This method can both increase the selenium in the fruit and prolong the selling time;therefore it has good social effect and economic value.
