广东韩江不同年龄鲮鱼鱼体化学组成的研究

【摘要】 为探讨韩江下游潮州江段野生鲮鱼Cirrhina molitorella鱼体化学组成随生长变化的规律,2010年6月于韩江下游潮州江段采集鲮鱼22尾,年龄0~3龄,分为4个年龄组,其体长102~201 mm,体重(W)24.19~228.17g,分别测定了鱼体化学组成,估算其能量密度。结果表明,鲮鱼含水量(WAT)、蛋白质含量(PRO)、脂肪含量(FAT)和灰分含量占鲜重百分比分别为72.79%~75.54%、12.99%~17.06%、8.18%~12.88%和2.35%~3.38%,能量密度(E)为5.03~7.36 kJ/g;蛋白质含量、脂肪含量和能量密度随年龄增加均呈增加的趋势,含水量呈下降趋势,各组灰分含量无显著差异;年龄与蛋白质含量、脂肪含量和能量密度呈显著的正线性关系,而与含水量呈负线性关系;含水量与蛋白质含量、脂肪含量和能量密度呈显著的负线性关系。提示可以用鲮鱼的含水量及体长估计其蛋白质含量、脂肪含量和能量密度。

【Abstract】 To observe the variation of chemical composition of Cirrhina molitorella,22 specimens with a body length(L) of 102~201 mm,body weight(W) of 24.19~228.17 g and age from 0~3 year were collected from the lower reaches of Hanjiang River in June,2010,and divided into 4 groups according to the age.Chemical compositions are measured and energy density is estimated.The results showed that the contents of water(WAT),protein(PRO),lipid(FAT) and ash(represented by percentage of them in fresh body weight of fish,respectively) ranged 72.79%~75.54%,12.99%~17.06%,8.18%~12.88%,and 2.35%~3.38%,respectively.The energy density(E) ranged 5.03~7.36 kJ/g.With the increase of age,body PRO,FAT and E increased,while WAT decreased.The content of ash varies erratically.PRO,FAT and E are all positively correlated with age,while WAT is negatively correlated with L.The contents of PRO,FAT and E are all negatively correlated with the content of WAT.The results suggest that the contents of PRO,FAT and E of C.molitorella can be estimated by the content of water or body length.
