一株酒精酵母的分离及其发酵性能分析
Isolation of a strain of Saccharomyces cerevisia and analysis of its fermental performance
【摘要】 采用稀释涂平板法,从酒糟中分离出了一株酿酒酵母,经100 L厌氧发酵罐进行酒精发酵,对该菌的发酵性能进行了分析。同时我们还进行了上罐发酵前的预实验,通过单因子优化法发现,当麦芽汁为2%,接种量为20%时,该酒精酵母的发酵性能最好。结果表明,该菌株具有较强的发酵和产酒精的能力,为酒精的大量生产奠定了基础。
【Abstract】 A strain of Saccharomyces cerevisia was isolated by dilution of cell.And its fermentation and analysis of its fermental performance was done at anaerobic condition by 100L fermentation tank.What is more,Preliminary experiment were done before fermentation by fermentation tank and optimized some parameters of fermentation.As a result,when consistency culture medium of wort was 2% and inoculation number was 20%,this strain of Saccharomyces cerevisia had a high capability to fermentation and produce elcohol.It makes possible to produce elcohol in large.
