钙源对肉仔鸡生长性能、屠宰性能及肉品质的影响
Effect of dietary calcium sources on growth Performance,slaughter performance and meat quality in broilers
【摘要】 采用不同钙源及钙水平的日粮对肉仔鸡生长性能、屠宰性能及肉品质的影响,试验选用144只健康21日龄的AA肉仔鸡,随机分成4个处理,每个处理6个重复,每个重复6只。饲粮采用两种钙源(碳酸钙、氯化钙)、两个钙水平(0.90%、1.15%),试验期28d(4~7w)。结果表明,与碳酸钙相比,日粮中氯化钙可降低肉仔鸡的生长性能(P<0.05)及屠宰性能(P<0.05),降低胸肌剪切力(P>0.05)、肌纤维直径(P<0.05),并可提高胸肌的肉色a*值(P>0.05)。高水平钙可降低肉仔鸡生长性能(P<0.05)及屠宰性能,降低胸肌剪切力(P<0.05)、肌纤维直径(P<0.05)。钙源和水平互作对生长性能有影响(P<0.05),但对肉质无影响(P>0.05)。总之,选用1.15%氯化钙作为钙源,虽显著降低了生长性能和屠宰性能,但较碳酸钙组更好的改善了肉质。
【Abstract】 The experiment was conducted to study the effects of different dietary calcium sources and levels on growth performance,slaughter performance and meat quality in broilers.A total of 144 healthy,21-day-old broilers were randomly allocated into 4 treatments for 28 days.Each treatment contained 6 replicates with 6 broilers per replicate.Dietary calcium sources were calcium carbonate and calcium chloride,respectively.Dietary calcium levels were 0.90% and 1.15%,respectively.Results showed that:compared with the calcium carbonate,dietary calcium chloride could reduce growth performance(P<0.05) and slaughter performance (P<0.05),calcium chloride reduced shear stress (P>0.05) and muscle fiber diameter (P<0.05) of breast muscle,but improved the meat color of a (P>0.05) of breast muscle.High level of calcium could reduce the growth performance (P<0.05) and slaughter performance of broilers,and also reduced shear stress (P<0.05) and muscle fiber diameter (P<0.05) of breast muscle.The interactions between calcium source and calcium level the had significant influence on growth performance (P<0.05).But it had no significant influence on meat quality.In conclusion,calcium chloride used as a source of calcium significantly reduced the growth performance and slaughter performance,but it was better than the calcium carbonate group in meat quality.
