鄱阳湖不同生长阶段短颌鲚生化成分和能量的变化

【摘要】 2007年10月至2009年9月逐月采集短颌鲚样本,分析其不同体质量的生化成分和能量变化。结果表明,短颌鲚水分含量为77.03%~79.88%,粗灰分为2.75%~3.06%,粗脂肪为3.79%~4.29%,粗蛋白为13.11%~15.15%,能量含量为6.44~6.77 J/mg。随着体质量不断的增加,鱼体水分含量依次降低,灰分变化微小,脂肪、蛋白质和能量含量依次升高,脂肪含量在5个生长阶段差异不显著(P>0.05)。呈味氨基酸含量与总氨基酸含量的比值为39.36%~41.17%,在不同生长阶段中差异不显著(P>0.05)。

【Abstract】 The variation in body composition and energy content were analyzed during various growth periods in shortjaw tapertail anchovy Coilia brachygnathus in Poyang Lake from October,2007 to September,2009.The moisture was showed to range from 77.03% to 79.88%,crude ash from 2.75%to 3.06%,crude fat from 3.79% to 4.29%,crude protein from 13.11% to 15.15% and energy content from 6.44 J/mg to 6.77 J/mg.There were gradual increase in crude fat,crude protein and energy content and decrease in the moisture with increase in body weight,with some constant ash content.There was no significant difference in crude fat level at five growth stages(P>0.05).The content of delicious amino acids accounted for 39.36%~41.17%in total amino acids.
