茶皂素浸提条件优化及其抑菌效果

【摘要】 以脱脂茶籽粕为原料,以乙醇溶液为浸提剂,对茶皂素的提取条件进行了分析研究。在单因素实验基础上,应用正交分析法确定茶皂素提取的最佳工艺条件为:浸提温度75℃,pH 10.0,乙醇体积分数85%,料液比1∶12。在此条件下浸提3 h,茶皂素得率为18.13%。抑菌实验表明,所提取茶皂素对典型革兰氏阳性细菌、阴性细菌具有显著抑制效果,对酵母菌生长有强烈抑制作用,并部分抑制一些导致食品劣变的霉菌繁殖,具有食品防腐功能。

【Abstract】 The extraction conditions of tea saponin from camellia seed meal was studied.Based on the single factor experiments,the orthogonal test was used to confirm the optimal extraction conditions,and the conditions were 85% of ethanol concentration,1∶12 of material/solvent ratio,10.0 of pH,3 h of time,and 75℃.The yield of tea saponin was 18.13% under the optimal conditions.The antifungi experiments indicated that the tea saponin appeared remarkable antifungi effects on the typical G+ and G-bacteria,inhibited intensively the multiplication of S.cerevisiate,and could partially inhibit the multiplication of mildew,which suggested some antiseptic function of tea saponin.
