温州市2009年食品污染物中重金属检测分析

【摘要】 目的:了解2009年温州市食品污染物中铅镉汞的污染状况,初步确定铅镉汞含量高的食品,为食品污染物检测提供科学依据和为食品安全的危险性评价提供依据。方法:在温州市各区县的农贸市场或超市随机采集11类食品,共135个样品,经消化后用原子吸收法测定其中铅镉汞的含量。结果:本市11类食品中都有不同程度的重金属污染,其中蔬菜中的铅污染比较严重,超标率为45%;干食用菌中镉污染比较严重,超标率为82%,检出镉最大值为2.2 mg/kg,高出限量值的11倍;猪肾中汞的平均值和最高值都最大。结论:环境污染是引起食品重金属超标的主要原因,需减少污染物的排放和加强市场监管。

【Abstract】 Objective:To investigate the pollution condition of lead,cadmium and mercury in food pollutants,find out the kinds of food that have high content of lead,cadmium and mercury,and provide scientific basis to the monitor of food pollutants and the fatalness evaluation of food safety.Methods:Collect 135 samples of 11 kinds of food from different supermarkets in different counties of Wenzhou.After digestion,use atomic absorption method to measure the content of lead,cadmium and mercury.Results:The 11 kinds of food are more or less polluted by heavy metals in this city.The lead pollution in vegetable is relatively serious,and the unqualified rate is 45%;the cadmium pollution in dry edible mushrooms is comparatively serious,and the unqualified rate is 82%,the maximum of cadmium is 2.2 mg/kg,eleven times than the limition.Conclusion:Environmental pollution is the main cause of the exceeding of heavy metals in food,so we shouold reduce the emission of pollutants and strengthen the monitor of markets and.
