紫荆花花红色素提取及稳定性研究

【摘要】 紫荆花学名CercisChinensis,别名满条红,苏芳花,豆科紫荆属。原产于中国,花期长达半年,花量茂盛,花色艳丽。[目的]研究从紫荆花中提取花红色素的最佳提取工艺条件及理化稳定性质。[方法]以校园紫荆花为原料,采用浸提法,确定最佳提取剂,提取红花色素。通过单因素试验、正交实验和方差分析研究花红色素的最佳提取条件。[结果]紫荆花花红色素的最佳提取工艺条件是:30%的柠檬酸-水溶液做提取剂,温度为70℃,时间2h;原料与提取剂配比为1g:30mL。对提取的紫荆花中的花红色素的溶解、光谱、光、热、pH值、氧化剂、还原剂、常见金属离子及常用食品添加剂等理化稳定性质进行了进一步研究。[结论]紫荆花中花红色素是一种较稳定的药食兼用色素源。可进一步开发利用。

【Abstract】 The scientific name of the China Redbud is Cercis Chinensis,which also known as Man-tiao-hong flower or Su-fang flower,Leguminosae redbud.Originated in China,It has a long flowering period of six months,an abundant flowers and very bright colors.[Objective]To study the optimum extracting condition of red pigment from Cercis Chinensis and the stability of its physicical and chemical characters.[Method]To identify the best extraction solvent,the single-factor experiment and orthogonal experiment were performed and analyzed.[Result]The optimum extract condition was:30% citric acid as the extraction solvent,T=70℃,extracting time=2h,liquid material ratio is 1g to 30mL.Further analysis was focused on the dissolution,spectrum,light,heat,pH,oxidants,reducing agents,the influence of common metal ions and common food additives on the pigment.[Conclusion]Cercis Chinensis pigment is a stable drug-edible material.It is worth of further research and utilization.
