普鲁兰酶的应用对柠檬酸发酵的影响研究
Application of pullulanase on citric acid fermentation
【摘要】 通过10L发酵罐试验,研究了普鲁兰酶的应用对柠檬酸发酵的影响。研究结果表明:在原料处理中按0.01%加普鲁兰酶,产酸率提高1.1%,转化率提高8.2%,发酵周期缩短12h。
【Abstract】 Effect of application of pullulanase on citric acid fermentation was studied using 10-L fermenter. The results showed that the yield of citric acid and transformation of raw materials was improved by 1.1% and 8.2%, respectively and fermentation period was shortened by 12 h when added pullulanase in raw material by 0.01%.
