甘薯叶蛋白提取方法对提取率及营养成分的影响研究

【摘要】 试验采用4种方法分别对甘薯茎叶中的蛋白质进行了提取,并测定了各提取物的主要营养成分的含量。结果表明,甘薯叶片中的蛋白质含量高于茎尖和茎;酸法提取效果较好,产率为19.52%;提取物中粗蛋白含量为40.57%,脂肪含量11.71%,灰分含量16.72%,粗纤维含量6.67%。提取物采用微波中等火力干燥3 min可以得到良好的感官和物理特性。

【Abstract】 Four methods were used to extract the leaf protein concentration(LPC) of sweet potato and the con-tents of main elements in the extracts were measured.The results were as follows,protein content in sweet potato leaf is higher than that in tender stem and stem;acid extraction has better effect with the yield of 19.5% and the crude protein,fat,ash and crude fiber in the extract is 40.6%,11.7% 16.7%,and 6.7% respectively.The product which was dried with microwave of medium fire power for 3 minutes has better sensible and physiological quality.
