【摘要】 以红薯叶为主要原料,添加适量的猕猴桃汁及其它辅料,研制出营养丰富、风味良好、具有一定保健作用的红薯叶果汁复合饮料。并对红薯叶提取液进行脱苦研究,加苦味掩蔽剂β-环糊精,用量为0.6%,既能脱苦又能最大限度保持有效成分的含量;通过正交试验得出饮料的最佳配方:红薯叶提取液为53%,猕猴桃汁为6.0%,白砂糖为7.5%,柠檬酸为0.15%,β-环糊精为0.6%。更多还原

【Abstract】 To introduce the process of compound health beverage,which used Sweet Potato leaves as main material and mixed the extract of Sweet Potato leaves with the fresh kiwifruit juice and other excipient.This kind of beverage had abundant nourishment,good flavor and health function.Debittering of the extract of Sweet Potato leaves was studied and the result showed that adding 0.6 % β-cyclodextrin could debitterize and keep effective composition mostly;through thogonal test,we confirmed the best formular of health drink was that Sweet Potato leaves juice 53 %,kiwifruit juice 6.0 %,suger 7.5 %,lemon acid 0.15 %,β-cyclodextrin 0.6 %.更多还原
