【Abstract】 The antioxidant properties and applications of chitosan and its derivatives are reviewed in this paper.The antioxidant properties of chitosan are mainly determined by its molecular weight and degree of deacetylation.In addition,etherification,esterification,acylation and chelation with metal elements all also influence the antioxidant properties of chitosan.Chitosan and its derivatives have broad application prospects in fresh-keeping of fruits and vegetables,juice clarification,browning prevention,aging delay,and so on.更多还原
