超高压方便玉米粥生产工艺的优化

【摘要】 对利用超高压技术生产方便粥的生产工艺进行了优化,以玉米为超高压方便粥的原料,选择铝箔蒸煮袋作为包装材料,研究了浸泡条件及压力对玉米粥生产的影响,以感官评价法确定生产工艺为:原料8g→淘洗→沥干→固液比1:6·5→铝箔袋包装→50℃浸泡30min→200MPa处理5min→120℃蒸煮30min。对成品方便粥进行了质量检测,蛋白质含量为3·045%,微生物检验全部符合罐头食品商业无菌标准。

【Abstract】 Ultra-high pressure manufacturing process ofinstant maize porridge was studied and optimized.Aluminum foil bags were selected as the packing materials.And the influence of soak condition and pressure on maize was also studied.Sensory evaluation of porridge was used to determine manufacturing process as follows:raw materials(8g),washed and drained,soaked at 50℃ for 30min in 6.5 times water,200MPa treatment for 5min and cooked at 120℃ for 30min.The quality of the porridge was also tested.The protein content of the porridge was 3.045% and all the products were met with the criterion requirements of canned food hygiene-examination of commercial sterilization.
