【摘要】 研究麦胚蛋白酶解物的体外抗氧化活性。采用邻苯三酚自氧化、Fenton反应及FTC法分析酶解物清除自由基及抗脂质过氧化的效果。结果表明:麦胚蛋白酶解产物对三种自由基均有一定的清除活性,量效关系明显;其清除O2-·、·OH、DPPH·三种自由基的IC50分别为6.2、3.5、2.3mg/mL;在亚油酸体系中具有良好的抗氧化效果。麦胚蛋白酶解物是有效的、多功能的天然抗氧化剂和自由基清除剂,具有综合开发利用的价值。更多还原

【Abstract】 Researched the antioxidantion activeness in vitro of wheat germ protein enzymolysis.Analysis the effect of enzymolysis scavenging radical and the anti-lipin peroxidation by using the pyrogallol system,the Fenton reaction and the FTC.The result indicated that:The Enzymolysis product of wheat germ protein has certain scavenging activeness to three kind of radicals,and has obvious effect-relations.It scavenge the IC50 of O2-·、·OH、DPPH·three kind of radical is:6.2、3.5、2.3 mg/mL,respectively;It has the well antioxidantion effect in the linoleic acid system.The enzymolysis of wheat germ protein is effective,the multi-purpose natural antioxidantion and the radical scavenger,has the comprehensive development using value.更多还原
