【摘要】 为筛选出宣威火腿较佳的原料猪种,选择当地颇受欢迎的5个杂交组合肉猪进行饲养屠宰测定。结果表明:180日龄个体重,三个含乌金猪血缘组合(YNⅠ、YNⅡ、YDH)皆达到或超过90 kg理想指标,YSZ(约苏钟)较差,只有86.87 kg,但差异不显著(P>0.05)。料重比,也以YNⅠ(约滇陆)最好。鲜肉风味感官色香味嫩度评分,凡含有乌金猪血统组合皆居前。更多还原

【Abstract】 The aim of the studies was to finding the fitter breed for Xuanwei-Ham,we had the feeding and slaughting test that five assembled Swine be selected at Xuanwei.The result indicated : About 180 day’s weight,Three breedes swine reached/exceed 90 kilogramme which they have Wujing blood,the weight of YSZ(York and Suzhong Crossbreed) is only 86.87 kilogramme.About the ratio of food to gain,YNⅠ(York and Dianlu Crossbreed)had best achievement.The meat grade of fragrance、sense、color and tender,the swine of Wujing Blood are very well.更多还原
